Ingredients

  • 1 cup rolled oats preferably old-fashioned for chewy texture
  • 1/2 cup sunflower seeds toast for extra flavor if desired
  • 2 tablespoons chia seeds adds crunch and helps bind
  • 1/4 cup shredded coconut unsweetened preferred
  • 1/3 cup honey or maple syrup for sweetness
  • 2 tablespoons nut butter almond or peanut butter works well

Equipment

  • Mixing bowl
  • Spatula
  • Saucepan
  • Parchment paper
  • Baking sheet

Method

  1. Gather your equipment: a mixing bowl, spatula, saucepan, parchment paper, and a baking sheet. Line the baking sheet with parchment for easy cleanup.
  2. In the mixing bowl, combine the oats, sunflower seeds, chia seeds, and shredded coconut. Mix thoroughly until ingredients are evenly distributed.
  3. In a small saucepan over low heat, gently warm the honey and nut butter until they melt and become smooth, about 2-3 minutes. Stir frequently to combine.
  4. Pour the warm honey and nut butter mixture over the dry ingredients. Use the spatula to fold everything together until the mixture is sticky and well-coated, about 2 minutes.
  5. Once combined, check the mixture's consistency. If it feels too dry, add a tiny splash of water or more honey; if too sticky, sprinkle in a few more oats and fold again.
  6. Using your hands or a small scoop, shape the mixture into bite-sized balls, about 1 inch in diameter. Place each ball on the prepared parchment-lined baking sheet.
  7. Gently press the balls slightly flat if desired, then place the tray in the fridge. Chill for at least 30 minutes until firm and set.
  8. After chilling, the bites should feel firm and chewy. Transfer them to an airtight container and store in the fridge for up to a week, or freeze for longer storage.
  9. Enjoy directly from the fridge for a chewy, cool snack, or let sit at room temperature for 10 minutes to soften slightly before eating.
